This yummy Chicken Burrito Bowl recipe is a quick meal for lunch or dinner with the perfect combination of cilantro lime rice, black beans, and corn salsa. Make your meal vegan by omitting the chicken or vegetarian with seasoned veggies! The options are endless when using Addy Daddy's Honey Chipotle Seasoning.
- 2 ½ tablespoon of Honey chipotle seasoning
- 1 ¼ pounds chicken
- 2 cups corn, (thawed if frozen)
- 1/2 red onion, diced
- 1 can black beans, drained and rinsed
- 1 cup diced tomatoes (I would suggest cherry)
- 1 lime juice
- 4 cups, cooked rice
- 2 limes, juiced
- 1/3 Cup chopped cilantro
- Fresh cilantro
- Shredded Cheese
- Sour Cream or Mexican crema
- Hot Sauce
- Purple Cabbage or lettuce
Cook rice according to the package directions. Once the rice is done mix in the lime juice, cilantro, and salt.
In a medium sized bowl mix the corn, black beans, red onion, tomatoes, lime juice, and ½ tablespoon.
Mix 1 tablespoon of honey chipotle seasoning together in a small bowl and set aside.
In a large skillet over medium-high heat add 1 tablespoon of coconut oil or Avocado oil. Add the chicken and sprinkle the remaining spice mixture over the chicken, stir. Cook the chicken until cooked through, about 5-6 minutes (depending on the size) and remove from heat.
To assemble the bowls layer rice, corn salsa, and chicken. Top with any of the toppings that you desire.
TIP(S): To maximize Addy Daddy's Honey Chipotle flavor in your chicken, marinate overnight by adding ¼ cup olive oil to seasoned chicken and cover.
