INGREDIENTS
Chicken:
- 2 ½ tablespoon of Honey chipotle seasoning
- 1 ¼ pounds chicken
Corn Salsa:
- 2 cups corn, (thawed if frozen)
- 1/2 red onion, diced
- 1 can black beans, drained and rinsed
- 1 cup diced tomatoes (I would suggest cherry)
- 1 lime juice
Cilantro Rice:
- 4 cups, cooked rice
- 2 limes, juiced
- 1/3 Cup chopped cilantro
Optional Toppings:
- Fresh cilantro
- Avocado
- Shredded Cheese
- Sour Cream or Mexican crema
- Hot Sauce
- Purple Cabbage or lettuce
INSTRUCTIONS
Cilantro Rice:
Cook rice according to the package directions. Once the rice is done mix in the lime juice, cilantro, and salt.
Corn Salsa:
In a medium sized bowl mix the corn, black beans, red onion, tomatoes, lime juice, and ½ tablespoon.
Chicken:
Mix 1 tablespoon of honey chipotle seasoning together in a small bowl and set aside.
In a large skillet over medium-high heat add 1 tablespoon of coconut oil or Avocado oil. Add the chicken and sprinkle the remaining spice mixture over the chicken, stir. Cook the chicken until cooked through, about 5-6 minutes (depending on the size) and remove from heat.
To assemble the bowls layer rice, corn salsa, and chicken. Top with any of the toppings that you desire.
TIP(S): To maximize Addy Daddy's Honey Chipotle flavor in your chicken, marinate overnight by adding ¼ cup olive oil to seasoned chicken and cover.
