Ingredients:
- 1 cup all-purpose flour
- 1 tablespoon Addy Daddy Jalapeno Ranch Seasoning
- 10 ounces frozen corn
- 2 teaspoons baking powder
- 2 tablespoons unsalted butter, melted
- 2 jalapenos, deseeded and finely chopped
- 3/4 cup whole milk
- 1 large egg
- Vegetable Oil for frying
Maple Cream Cheese Dip:
8 ounces softened cream cheese
2 tablespoons maple syrup
2 tablespoons green onions, finely chopped
Directions:
1.) In a mixing bowl, combine softened cream cheese and maple syrup until well combined. Fold in the chopped green onions. Set aside.
2.) In a medium-high heat pan, char the frozen corn until slightly browned. Be careful not to burn the corn. Set aside.
3.) In a separate mixing bowl, whisk together the all-purpose flour, Addy Daddy Jalapeño Ranch Seasoning, and baking powder until well combined.
4.) In another bowl, whisk together the melted unsalted butter, whole milk, and egg.
5.) Combine the wet ingredients with the dry ingredients until a smooth batter forms. Fold in the charred corn and finely chopped jalapeños.
6.) Preheat vegetable oil to 350 degrees Fahrenheit (175 degrees Celsius) in a large skillet, deep fryer, or wok over medium heat.
7.) Using a small scoop or spoon, carefully drop the batter into the hot oil and fry until the fritters are golden brown, about 1-2 minutes on each side.
8.) Remove the fritters from the oil and place them on a paper towel to drain excess oil.
9.) If needed, salt the fritters immediately after frying.
10.) Plate the jalapeño fritters and serve them warm with the prepared maple cream cheese dip.
