PAN SEARED SNAPPER WITH SUN-DRIED TOMATO CREAM SAUCE

Serves: 6 | Level: Easy | Approximate Time: 35 minutes

Ingredients:

  • 1 ½ pounds of Snapper (scored on the back of the fish)
  • 2 to 3 tablespoons of Addy Daddy Everything Seasoning (adjust to taste)
  • 3 cloves of minced Garlic
  • ½ large Onion, diced
  • ½ cup Sun-Dried Tomatoes in oil (about 8 ounces)
  • 1 cup Frozen Spinach (or 2 cups fresh)
  • 1 Mushroom, sliced (optional)
  • 1 cup Half and Half (or 1 can of coconut milk for a dairy-free option)
  • 4 tablespoons olive oil for cooking (high heat)

Instructions:

  1. Rinse the snapper and season it with 1 to 1 ½ tablespoons of Addy Daddy Everything Seasoning.
  2. Heat 2 tablespoons of olive oil in a hot cast-iron pan.
  3. Place the seasoned snapper in the hot cast-iron pan and sear it on both sides for 2 ½ minutes. Set the snapper aside.
  4. In the same cast-iron pan, add 2 tablespoons of olive oil, diced onion, minced garlic, sliced mushrooms, and spinach. Sauté until the onions are translucent.
  5. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
  6. Add the half and half (or coconut milk), sun-dried tomatoes, and 1 ½ tablespoons of Addy Daddy Everything Seasoning to the cast-iron pan. Let it come to a boil.
  7. Portion out the snapper and add it back to the cast-iron pan. Place the pan in the preheated oven for 10 minutes.
  8. Serve the seasoned snapper with sun-dried tomatoes and spinach over cauliflower rice and asparagus for a keto-friendly meal or serve it with jasmine rice cooked in coconut milk.
