Ingredients:
- 8 oz sliced portobello mushrooms, gills removed
- 1 cup tri-color bell peppers, sliced
- 1 cup red onion, sliced
- 2 cloves of garlic, minced
- 2 tablespoons avocado oil
- 1 ½ to 2 tablespoons Addy Daddy Taco Seasoning
For Serving:
- Low carb tortillas
- Guacamole
Directions:
- In a hot skillet, add 1 ½ tablespoons of avocado oil and sliced red onions. Cook for 3 minutes.
- Add the sliced peppers, 1 tablespoon of Addy Daddy Taco Loco seasoning, and cook until the peppers are tender and charred. Remove from the pan.
- Add another 1/2 tablespoon of avocado oil, sliced mushrooms, and the remaining taco seasoning. Cook until the first side of the mushrooms is charred, and they begin to get tender. Flip and repeat.
- Return the cooked peppers to the pan and cook for a few more minutes.
- Serve the sizzling portobello fajitas hot with low carb tortillas, guacamole, and any other desired sides such as salsa.
