Sizzling Portobello Mushroom Fajitas

  • 8 oz sliced portobello mushrooms, gills removed
  • 1 cup tri-color bell peppers, sliced
  • 1 cup red onion, sliced
  • 2 cloves of garlic, minced
  • 2 tablespoons avocado oil
  • 1 ½ to 2 tablespoons Addy Daddy Taco Seasoning


For Serving:

  • Low carb tortillas
  • Guacamole


  1. In a hot skillet, add 1 ½ tablespoons of avocado oil and sliced red onions. Cook for 3 minutes.
  2. Add the sliced peppers, 1 tablespoon of Addy Daddy Taco Loco seasoning, and cook until the peppers are tender and charred. Remove from the pan.
  3. Add another 1/2 tablespoon of avocado oil, sliced mushrooms, and the remaining taco seasoning. Cook until the first side of the mushrooms is charred, and they begin to get tender. Flip and repeat.
  4. Return the cooked peppers to the pan and cook for a few more minutes.
  5. Serve the sizzling portobello fajitas hot with low carb tortillas, guacamole, and any other desired sides such as salsa.
  6. Enjoy these delicious and flavorful fajitas!
